One of the most important surgical procedures recommended for the treatment of obesity and stomach cancer is a gastroplasty. Patients who have had gastrectomy procedures struggle with issues like starvation, anorexia, and energy deficiency. The purpose of this study was to offer nanofood as a successful method of supplying these patients with the energy and nutrition they require, with a focus on managing the release of proteins, lipids, and carbs on the simulated gastrointestinal tract (GIT).
Cooked pumpkin puree (CPP), sodium caseinate, sesame oil, rice bran oil, rice starch, sugar, and pectin were used to make an oil in water nano emulsion. Zein and alginate concentrations were varied in six delivery techniques, which were developed in both acidic (pH ranges of 2.45-2.81) and alkaline (pH ranges of 11.45-11.82) environments. We examined the calorific values of the samples (467.2-498.4 Cal/100 g) and the particle sizes (83.5-207.0 nm).

The encapsulated food matrix nano emulsion with zein/biopolymers alginate's delivery technique (0.15:0.16 w/v, pH = 8.30) and 489.9 Cal/100 g had the least digestible nutrients. The rate of nutrition release in the small intestine is rapid (72.14%). As a result, it is promoted as the best formulation. A great way to prepare nanofood for persons who have had a gastrectomy is to include CPP with other components while creating nano emulsions.

The following can therefore be highlighted. The manner in which nanofood is delivered affects how rapidly it breaks down in the GIT. The pace of digestion is significantly influenced by the particle size of nanofood. Nanofood provides essential nutrients and energy to gastrectomy patients. The addition of nanofood to a controlled release mechanism enhanced its bio accessibility. Pumpkin that has been cooked can be used to create the water phase of an oil in water nano emulsion.
